WILLIAM WOOD

William is the creative talent behind Carême; responsible for production, new product development and the hosting of Carême cooking classes. He learnt his trade in the kitchens of Mietta’s and Paul Bocuse in Melbourne in the early 1990's.  This classical background - and natural born perfectionism - put him in good stead for the exacting art of making pastry.

After returning from a stint travelling and working in Europe he worked with Philip Johnson at Ecco Bistro in Brisbane. It was here that William developed a respect and understanding of modest, simple dishes made with the freshest and finest ingredients. In 2002, following a break travelling the wine regions of France, Italy and Spain with his partner Claire, he returned to Australia where he embarked on a new culinary adventure working for Maggie Beer in the Barossa Valley.

When William is not elbow deep in flour and butter, he can be found exploring the back roads of the Barossa Valley on his 1975 Honda CB400F.

CLAIRE WOOD
Claire is responsible for the marketing and business operations of Carême. Originally from England she moved to Australia in 1996. Following more than 10 years working in the hospitality business, managing restaurants from Oxford in the UK to Lorne in Victoria she decided to turn her sights to the wine industry. After completing a diploma of business administration in Brisbane, and an ‘educational’ wine tour of Europe, she and partner William packed up their bags and headed to South Australia.

In 2003 Claire completed a degree in wine marketing at Adelaide University and went on to work for the highly successful Two Hands Wines in the Barossa Valley in the role of  Brand Manager.

Claire gave up her ‘day job’ in 2006 to focus full time on Carême. Today, she divides her time between looking after their two daughters, Florence and Elena and managing Carême.
