Sweet pastry or pâte sucrée is a shortcrust pastry enriched with egg yolks. Made with the finest quality unsalted butter and real vanilla each packet of Carême Sweet Shortcrust contains one sheet of ready rolled pastry approx. 460mm x 270mm x 3mm.
 
Uses

It’s ideal for making decadent summer fruit tarts or tartlets. Often it is baked blind and filled with a cream such as crème pâtissière (pastry cream) or crème Chantilly before topping with fresh fruits. It also makes an ideal base for a chocolate tart.

Sweet pastry can be used for:
  • Tart cases for fresh fruit tarts or tarlets
  • Tart cases for filled baked tarts or tartlets
  • Biscuits

Tip ~ save scraps, ball up and place in refrigerator for 30 minutes, roll out and cut out small biscuits, bake at 160. These are delicious dipped in left over crème pâtissière served with fresh strawberries.
